Plain Mortadella - Leoncini
Leoncini's mortadella is made by Leoncini in Verona, near Lake Garda in Italy. It is an encased cooked salumi, with a lean meat paste made out of shoulder muscle, a blend of spices and lardons. Slowly cooked for several hours in large ovens, the result is a silky smooth and rich meat.
