Le Secret de Compostelle expertly traverses contrasting notes of savory and sweet, leaving in its path a deliciously varied flavor profile of nuts, mushrooms, olives, and rich cream. Aged for about eight months, it is less sharp than other brebis from the Pyrenees and has an impeccably smooth and pliant texture. The rind can emit an off-putting odor (kind of like fish food), but it doesn’t affect the tastiness of the pearl-colored paste.
