Lardo - Salumeria Biellese
If you're looking for a silky, herbal replacement for pancetta or bacon, look no further than Salumeria Biellese's lardo. Lardo has been made in Italy since the Roman times, with strips of fatback cut from Berkshire pigs. Pressed with spices - particularly rosemary - and then buried in salt for a month, the lardo emerges a silky white, delicate slab of meat. When sliced thin, lardo is traditionally served as an antipasto.
